Theme: Grounding and Gratitude

  1. Garlic and Herb Roasted Mushroom Soup
    • Garlic and mushrooms provide protection, purification, and grounding. This soup is perfect for clearing energy and strengthening intuition.
      • Ingredients:
        • 2 cups portobello mushrooms, sliced
        • 2 minced cloves of garlic
        • 2 tablespoons of olive oil
        • 2 cups of vegetable broth
        • 1/2 cup of coconut milk or coconut cream
        • 1 teaspoon of dried rosemary for protection and clarity
        • Salt and pepper to taste
      • Prepare:
        • Heat oil olive in a pot and saute onions and garlic until fragrant
        • Add mushrooms and cook until softened
        • Pour in vegetable broth, add the rosemary, and simmer for ten minutes
        • At this point you can blend the mixture (or not) then stir in the coconut milk
        • Serve warm with a crusty bread for grounding energy
  2. Rosemary and Lemon Roasted Chicken with Root Vegetables
    • Ingredients:
      • 2 chicken breasts
      • 1 lemon, sliced
      • 1 tablespoon rosemary, for cleansing and clarity
      • 3 minced garlic cloves
      • 2 tablespoons olive oil
      • 2 carrots, chopped
      • 1 beet, sliced, for transformation and renewal
      • 1 sweet potato, cubed
    • Instructions:
      • Preheat oven to 4oo
      • Toss root vegetables with olive oil, salt, and rosemary
      • Place chicken in a baking dish, top with lemon, garlic, and rosemary
      • Arrange root vegetables around the chicken
      • Bake for 35-40 minutes, turning halfway.
